Spring and Summer Menu Selections

Salads
These salads are considered a complete meal on their own.
- Chinese Chicken Salad: Asparagus spears, poached chicken breast and red peppers with an Asian-inspired dressing.
- Tabbouleh Salad with Chicken: A delicious Middle Eastern summer salad with grilled chicken. Bulgur wheat makes it especially nutritious.
- Baby Spinach & Micro Green Salad with Grilled Salmon: Topped with sesame goat cheese rounds. Crusty bread is all you need with this salad for a wonderfully light meal.
- Shrimp and Crab Pasta Salad: A refreshing salad made with the freshest seafood.
Beef
- Beef Bourguignon: Classic French style beef stew with mushrooms in a red wine sauce.
- Beef Tenderloin Stew: Tenderloin makes this stew special.
- Blue Cheese Topped Filet Mignon:Rich and delicious, the best Angus beef cooked the way you like it.
- Beef Taco Lasagna: A Mexican twist on a traditional favorite.
- Gremolata Rubbed Roast Beef: Flavored with parsley, thyme, garlic and lemon. I'll leave extra gravy for this dish so you can soak it up with your bread.
- Korean BBQ Flank Steak: Enjoy with my hot and sour slaw salad.
- BBQ Beef Sandwich: Slow-cooked shoulder roast falls apart after slow-cooking all day.
- Apple Meatloaf: Shredded apple make this loaf moist and wonderful. Made with ground sirloin.
- Greek Style Meatballs: Served over couscous and topped with feta dressing.
Poultry
- Raspberry-glazed Chicken: Flavored with raspberry preserves and fresh ginger.
- Tortilla Chip Chicken: Boneless chicken breasts are coated with Mexican seasonings and tortilla chips and baked.
- Chicken Satay: Thai peanut sauce spices up this dish.
- Thai Chicken with Green Curry: Spicy with a curry and coconut sauce.
- Saucy Tropical Turkey: Red peppers and pineapple chunks make you feel like you are on vacation.
- Arroz Con Polo: A real Mexican classic, chicken with rice.
- Lemon Chicken with Asparagus: Fresh lemon juice adds a bright note to this pan sauce.
- Parmesan Crusted Chicken: Freshly grated parmesan cheese makes this chicken golden brown and delicious.
Pork
- Spiced Pork Tenderloin: Served with my homemade summer relish of tomatoes, onions and corn.
- Pork Chops with Pierogies: A different way to enjoy a Polish favorite.
- Chipotle-stuffed Pork Tenderloin: Serve with my homemade orange-onion salsa.
- Pad Thai: The most famous Thai noodle dish of all. My version includes shrimp and pork.
- Honey Baby-backs: With homemade honey barbeque sauce.
- Pasta, Ham & Veggie Gratin: Creamy and delicious with a nice brown crust on top.
- Pulled Pork: Boston butt roast is slow-cooked all day so it can be easily shredded up for sandwiches.
Seafood/Fish
- Red Snapper: With tomatoes and cream.
- Grilled Salmon with Basil and Mint: Simple, yet sophisticated. Wild salmon grilled to your liking or it can be left for you to grill.
- Ginger-marinated Tuna: Savory grilled tuna, serve with my homemade Wasabi butter.
- Tuna Steaks with Salsa: Mango and carrots make this salsa unique.
- Crab-stuffed Haddock: Fresh crabmeat stuffing and breadcrumbs on top.
- Crab Rockefeller: A delightful dish with rich flavors. Spinach and a golden crumb topping make it pleasing to the eye and the palate.
- Thai Fish Curry: Fresh fish is combined with traditional Thai ingredients for a spicy supper.
Vegetarian
- Pasta with Pesto & Peas: A terrific summer supper can be enjoyed at room temperature.
- Veggie Pot Pie: Flavorings from Provence, these individual pies are comforting on a cool summer night.
- Thai Vegetables with Tofu: Using red curry, I'll make this dish as spicy as you like.
- Sweet Potato Burritos: Spicy mashed sweet potatoes and black bean filling, top with salsa and sour cream, you'll love these healthy burritos.
Lamb
- Herbed Lamb Chops: A bed of caramelized onions gives these chops a succulent flavor.
- Braised Lamb Shanks: With garlic, rosemary and white wine.
- Lamb Tagine: Traditional Moroccan dish served with toasted almonds.
